比内地鶏、薩摩地鶏と並んで、日本三大地鶏に数えられる地鶏の王様「名古屋コーチン」の手羽元で、その特長は、弾力に富むよく締まった肉質と深いコクのある味わいにあります。
当店の名古屋コーチンは、通常の鶏肉（ブロイラー）の約３倍もの期間をかけ、開放的な鶏舎で育てられた自信作です。
飼育は愛知県内の契約コーチン専門農家に限定、風味を左右するえさも育成状況にあわせて三段階で調整するなど、手間ひまかけた一品となっております。
往年の「かしわ肉」を思わせる、名古屋コーチンならではしっかりとした歯ごたえ、噛めば噛むほど口の中に広がる旨味をご賞味いただけます。
