≪一般的な餅の無菌包装の問題点≫

添加物などが少なく安全な食材と思われがちなお餅ですが、水分を多く含むお餅は非常にカビやすいため、賞味期限の設定を長くすることが困難でした。

しかし最近主流となってきた「無菌包装」という技術により、出来立てのお餅の特徴を長時間保ちながら流通させることが可能になっています。

ところが「無菌包装」は、無菌室の中で包装する袋や容器などをアルコールなどで殺菌し、無菌化状態にした後に包装する方法です。

中には原料のもち米をクエン酸に浸したりアルコール消毒する方法もあるようです。

殺菌に使われる薬剤は加工助剤としてキャリーオーバーのため品質表示の義務はなく、安全性には非常に大きな疑問の残る方法であると言えるようです。

こちらの切り餅は、シンプルに包装後の加熱殺菌のみとなっているため、長期保存しても安心してお召し上がりいただけます(*^^*)
