削り花が綺麗で上品な味の「背節」です。

通常鰹節は巻き網漁法で大量に漁獲されるため魚がぶつかり合い

身が痛んだりストレスで乳酸が発生し味が落ちる原因となります。

主に日本近海でとれる1本釣りカツオは適度に脂がのって上品な味です。

また、本枯節の鰹節は数ヶ月の間手間ヒマかけてつくられ

生のカツオと比べると6分の1の大きさになります。

なので、鰹節の6倍の大きさの刺身を思えば決して高くはないのです。
